 EGG MASALA CURRY IN BENGALI STYLE/ EGG KOSHA -

Dim kosha aka egg masala curry is a Bengali delicacy. it can be served with hot steamed rice, luchi, or paratha.

INGREDIENTS :

 
EGG: 5 PCS
POTATO: 1 PC. DICED (optional)
ONION: 1 BIG, SLICED
GRATED GINGER: 1/2 TSP
GARLIC CLOVES: 4-5
GREEN CHILI: 4
TOMATO: 1 PC
TURMERIC POWDER: 1 TSP
CORIANDER POWDER: 1/2 TSP
RED MIRCHI POWDER: 1/2 TSP
CUMIN SEED: 1/2 TSP
SALT TO TASTE
SUGAR: 1/4 TSP
MUSTARD OIL: 5TSP
CARDAMON: 3 SMASHED
BAYLEAF: 1
CINNAMON STICK: 2
GARAM MASALA POWDER: 1 /2 TSP
CILANTRO (ধনেপাতা) TO GARNISH

HOW TO COOK : 

  • Boil the eggs in salt water for 6-10 mins. and once done, let them cool and peel

    .

  • peel the eggs and split them slightly with a knife, now sprinkle 1/2 tsp salt, 1/2 tsp turmeric powder, and 1/2 tsp Kashmiri red chili powder. Rub them on each piece.

  • Take a wok and put flame. Add 5tsp mustard oil, and allow it to smoke.
  • when it is hot add the marinated eggs and sauté them for a couple of minutes till the eggs are lightly brown. 
  • add the diced potatoes also and fry them the same as the eggs (optional). keep them aside. 

  • in the same oil add a bay leaf, cinnamon, cardamom, and whole cumin seeds. when it starts to splutter, add the sliced onion and fry them till golden brown.

  • Now add the grated ginger, chopped garlic cloves,  tomato paste, turmeric powder, coriander powder, Kashmiri red chili powder, and a pinch of sugar for color. Cook till the raw flavor exists.

  •  
  •  stir continuously until the masala is thoroughly cooked. When the masala releases oil then adds fried eggs and potatoes and mix them with the masala properly.

  • now, add some warm water and salt to taste, green chilies. cover and allow simmer for a couple of minutes.
  • in the next step, check if the taste is ok or not. you can adjust the taste in this step.
put off the flame. Sprinkle 1/2 tsp garam masala powder and garnish with cilantro/ "dhonepata".

  •   finally, spicy egg kosha is done and is ready to serve steamed rice, luchi or paratha.
