Bengali-Style Colocasia Curry/ ALU GATHI KOCHUR DUM/ MUKHI KOCHUR DUM

 ALU GATHI KOCHUR DUM/  AMISH MUKHI KOCHUR DUM /BENGALI STYLE COLOCASIA CURRY/ আলু – গাঁটি কচুর দম (আমিষ)

Gathi Kochu in Hindi Arbi is very healthy and nutritious. It can be made as a veg or non-veg  Bengali side dish. Sometimes it causes Allergy or itchy sensation to some people, you can use lime juice while cooking the dish to avoid these sensations. 




INGREDIENTS:

TARO ROOT/GATHI KOCHU: 300GM

POTATO: 2 MEDIUM, CHOPPED INTO 4 PIECES

CUMIN SEED: 1/2 TSP

GINGER- garlic paste:2 TSP

TURMERIC POWDER:1/2 TSP

CUMIN POWDER, CORIANDER POWDER: 1/2 TSP

CINNAMON STICK: 1

BAY LEAF:1

ELACH/ CARDAMON: 3 CRUSHED

 DRY RED CHILLI: 1

GREEN CHILIES: 3-4

MUSTARD OIL: 4TSP

SALT TO TASTE

SUGAR:1/4 TSP

TOMATO:1

GHEE: 1/2 TSP

GARAM MASALA POWDER

HOW TO COOK:

  • Peel off the skin of taro root and potatoes, cut them vertically, and wash them thoroughly. Keep them aside.
  • now put mustard oil into the Kadai, once it starts to smoke, add cumin seed, dry red chili, and bay leaf and fry them for 1-2 min. , when they start to splutter add cinnamon stick and crushed cardamom.

  •  add the taro roots / gathi kochu and potatoes, mix salt and a pinch of turmeric powder, and fry them.

  • set them aside after frying.
  • then, add the ginger-garlic paste to the remaining oil, also add turmeric powder, 1/4tsp sugar, coriander & cumin powder. Mix them well and sauté until the raw smell is gone.
  • when it is almost done, add chopped tomato and cover the lid for 2mins.
  •  take off the lid, and add the fried taro roots/ gathi kochu/ arbi and potatoes.
  • add warm water as much as needed. Lower the flame and cook for a few minutes.


  • in the middle, you can check the taste and adjust the taste. 
  • when the 'dum' is almost done, then add 1/2 tsp ghee and sprinkle 1tsp garam masala powder.Mix them.

  • ''Gathi kochur dum'' is now ready to serve with hot steamed rice.
